finding delays and latency

Hi. I want to know what do the output files update delay and packet delay represent. How can their results be plotted? And how can we calculate latency?

I saw the wiki page but there is still confusion as to how we can calculate latency?
Secondly, using the excel files, how is update delay and packet delay actually plotted? do we plot their cdfs? I tried to see the impact of change in vehicular density on end to end delay but all graphs are same. Can you kindly me how to plot and the results if any of your paper has addressed those parameters?
