Overview
Refreshes the 18.1 versioned docs example bundles under runner/apps/authoring/public/docs-examples/18.1/ so embedded manifests pin Handsontable 18.1.1 instead of 18.1.0.

Each affected .json file updates htCoreRange and the inlined package.json dependencies (e.g. handsontable, @handsontable/angular-wrapper where used). Example source inside the bundles is unchanged aside from those version strings.
