Add option for overriding pixel size

The pixel size in EPU xml files is the uncalibrated size. There should be an option to override this.

Question: Does it need to be a per-instrument setting, or can it be configured statically for the extractor?

Likely can't be overridden in EPU.

Needs to be set depending on instrument and magnification.
